Nothing wrong with medium, I usually go that route or medium rare depending on my mood.

It depends on the restaurant. Ruth Chris steakhouse in my town is the absolute best when it comes to steak. Whether if it's rare, medium-rare, or medium, the steak is like eating butter - it melts in your mouth. More "commercialized" chains like Outback or Texas Roadhouse, you gotta order it one step below what you really want, because the steak always seems to be over-cooked. I cooked steak the other night which came out absolutely perfect! Just a bit of salt & pepper, seered it for a bit on both sides, slapped it in the oven for a couple minutes - almost rivaled Ruth Chris. |

Anyone ever try the reverse sear? Did this one time and the steak came out perfect, BUT it took freaking forever. I'm a huge proponent of the wireless thermometer. When it hits 120, put it on the cutting board for 10 minutes and it's a nice medium/medium rare.

If your into smoking meats and you don't use one...your quality control game is flawed. Grilling I usually don't go through the hassle. Also like to add on the Steak Game, after my meat has been chosen properly, salted/seasoned to perfection and then perfectly seared....I need it served on a pair of double d tits. Non starter if not. |

If you guys are ever in Arlington and want a steak check out Ray's. The steaks are spectacular, along with the mac and cheese/ mashed potatoes. Very reasonably priced as well.

I'll have to remember that! The wife and I are heading up to D.C. in the summer to catch U2 in concert, so we may have to make a special stop at Ray's. You just mentioned three of my most favorite foods of all time! Steak, mac & cheese, and mashed potatoes! |
