Re: Best Friday Night Dinner

Well the broil came out great but I was just caught off guard by the new kingsford coals. I don't buy real big London Broils because I think the smaller ones are more tender and marinate better.I use natural hardwood coals called cowboy charcoal Cowboy Charcoal Co. which is also a hot coal which is good for steaks. I think the problem I had with the kingsford is that I let them get too hot from the start. I know now not to leave the grill open while they finish lighting or to cover them for a few minutes before throwing on stuff like chicken.

Re: Best Friday Night Dinner

I rarely use briquettes. If I do I use hardwood. If its a steak/burger/chicken/fish I use just hardwood charcoal and if it's a longer cooking I'll use combo of the charcoal and the hardwood briquettes.

I guess I use Kingsford for hot dogs when tailgating.

If you see mine and over the mountains post its more about getting out in the yard drinking a few drinks and cooking out. I have a gas grill which I use but I enjoy grilling out and playing around fire, food, and booze.

Love propane grills...if you want wood flavors buy barbecue wood chips.
Thats funny you posted this because last night I used some of those new kingfords briquest last and i hate them. They light real fast and get really hot. I cook a London Broil last night and I could not take my eyes off it because I was worried it would burn. I even had all the vents closed off at one point and still had issues. Do you use a Charcoal Chimmy? If not you need to buy one as they are great and you do not need to use any light fluid. Here is a link to what they are and you can find them at any Lowes. The bigger one on the left is more $ but it light better and will out last two or three of the ones on the left. I have both gas and charcoal grills.

chimneys are awesome for coal starting

A few of my groomsmen got me the Weber Performer as a wedding gift 5 years ago, and it has many many uses on it. Only problem is I need to fix the propane starter.

I use Cowboy Charcoal (or regular Kingsford if I don't have time for a run to the hardware store) in the chimney starter and have a beer or 2 while the coals get ready. Did burgers and dogs the Sunday before last, but it won't be long until the grill see some marinated flank steak or some kebabs, or some nice smoked chicken thighs.

I had seen those Weber Perfomers and thought it was pretty cool. I thought that the propane starter might become and issue and from what you say it is. I found a meat that I like better then flank steak by accident. It is called Flat Iron Steak and I find it at Food Lion in the meat section. It lloks like flank steak but its not as flat and is a little more round in shape. I think if you marinate it for 6 to 8 hours it is some of the best meat to marinate. Here check this out about flat iron steak.

What did you do Matty to chase him off. I think I gained like 10 pounds when he was a member because he would post those cooking videos around 11:30 and after watching one I'd go eat twice as much as a normal lunch.

I think some other members went and met him when they were down for the Redskins Beach thing here in Va Beach. He was at the Chesapeake Fest. which is only like 20 miles away and a few members went buy to eat some of his BBQ. Maybe that was Hess I cannot remember.

Tonight I had a big peice of broiled striper with a little Old Bay and a squirt of lemon. Thats the good news. The bad news is it was the last of the striper and they are not in season for another month.

When the starter worked, it was awesome. Throw the coals over top the line, turn the gas on, ignite gas, let it run for 5 minutes, shut the gas off and after a while, gray coals to work with. I need to stop being lazy, take it apart and figure out what it's not working.

I'll have to check that out. I usually grab my flank steaks at Costco, and marinate with all kinds of things. My fave lately has been Newman's Own Mesquite with Lime marinade, but sometimes just some salt and pepper does the trick.

There's ValleyRanchGirl, and every so often Matty's wife throws up a post or two.

Man it was so funny when 12th asked Hess out.

My fiancee has gotten to the point where a few times a week she'll ask me what's going on on The Warpath. I try not to talk it up though. She's a Skins fan, and if she joined this forum I would feel like George Costanza when Susan and Elaine started hanging out and his world's collided. A George divided CANNOT STAND!

And I concur, Pat's & Geno's are way overrated. Though if you get them to use american cheese or provolone instead of the awful cheese wiz, then they're better.

I can never understand cheese wiz when you can have gooey melted american cheese all over your sandwich.
Born and raised in Philly...I like Delessandro's but Steve's Prince of Steaks is by far the best.

If you like Flank steak you really need to try and find a place that sells the Flat Iron Steak. My wife uses about a 1/4 cup of olive oil & balsamic vinegar dry mustard, dash of salt and pepper, and some Worcestershire sauce. Lets marinate all day.

Re: Best Friday Night Dinner

Flat iron steak is one of my favorite cuts because it's usually cheap and always tasty. It takes marinades REALLY well. Try half red wine vinegar and half soy sauce and let it sit as long as you want. The vinegar breaks the meat down where it's super tender and it's AWESOME off the grill.
