Thanks for all the advice. We ended up pan searing and oven roasting. Put it in the oven for about 8 mins. @ 500 and it came out perfect.

There was very little smoke. I used vegetable oil instead of canola because that's all we had. Added garlic powder and paprika. My only regret. Moved the pan off the heat when I put the steak in... grabbed the handle out of habit to move it back. First degree burns for the win! |

I have been cooking with a iron skillet for awhile so i remember now not to touch it but i had my share of those moments too. |
