Last night I had a 16 to 17 oz NY Strip that we split and it was so good I think I could have put down the whole steak by myself. I cooked it pretty hard on both sides for about 5min each side. I cook it for 2 1/2 min then rotate the steak 1/4 turn then another 2 1/2 min then flip and repeat.

Very late to the party, but sounds like your steaks during out fine 12th.
If you think charcoal is hard work, you're not doing it right. firstdown recommended the chimney starter. Load it up with coals, light newspaper underneath and within 15 minutes, you're cooking. Not as easy as turning a dial and clicking a button for gas, but damn well close enough. Plus charcoal trumps gas for flavor every day of the week and twice on Sunday. Did a london broil on my Weber not too long ago and it turned out a great dinner and sandwiches the next day. Used [URL="http://www.mccormick.com/Products/GrillMates/Marinades/Grill-Mates-Brown-Sugar-Bourbon-Marinade.aspx"]McCormick's Brown Sugar Bourbon marinade[/URL] on it, and the flavor was very nice. |

Here is what my wife does. Place salmon on a greased baking dish (the glass kind) skin down. I like leaving on the skin because it holds in moister and you can just eat the fish right off the skin. She gives the top side a light coat of Dijon mustard, squeeze on some lemon juice, salt, pepper, paprika, and bake for about 15min. on 400. You may need to play around with the cooking time a few minutes either way. I also like to blacken the salmon in a hot pan but if you cannot do that out side it will smoke up you house. I can get you name of the seasoning I use when I get home tonight as its the best I have found. |

I have planked grilled salmon before and the wood tast was too strong for me but it was not that bad. I was thinking about cooking it half the time on the plank then the other half on just the grill. The directions I gave him was off a cooking show on the food network. |

You have to keep an eye on it...you don't want the wood to "burn burn." I also like to douse the wood in lime juice and cover it with some pepper so it has less wood and more tangy flavor. |

It was not the burn smoke flovor it was more wood flavor from the steam. I still have a few planks I have to try the lime juice trick. Isn't salmon a local fish in your area?

The only problem with the lump wood charcoal is controlling the heat. I like the wood for hot fast cooking like steaks and burgers. I'd stay with charcoal and use some wood chips to add flavor. I soak the wood chips in water then just drop some in every time I check the meat. You can also wrap the soaked charcoals in aluminum foil and drop that on the coals. My only gripe with the briquets is the ash that it produces.
I chose to go with wood mainly this time because of how it burns down, and I heard the same about lump charcoal. I heard that it burns hotter and longer so I'm guessing I won't need to use as much ? That's the charcoal that I bought actually ! |

They are not that bad to use but when they burn down they burn down to nothing. I've never really tried slow cooking with them so I guess we can see how they work. I would guess they would give a better taste then traditional charcoal. Its funny because you will get pieces of wood that you can tell was scraps from hard wood floors. I have a Weber charcoal grill and just this past Sunday purchased a new gas grill. Check out this grill I got.

When the weber charcoal grill I have needs replacing I'd like to get one like the Oklahoma you posted. I grill about 50/50 gas/charcoal. I like the charcoal for my slower cooking stuff like chicken and the gas for beef. I also use the weber to cook beer butt chicken which I cook a couple of time a month. When it gets warmer I want to get your recipe for BBQ.

Yeah I want that big B too! I don't have a recipe for real but I'll definitely tell you what I do. I'm trying to do better at documenting what it is that I do. I'm about to start smoking this batch now. Just took them out the fridge and I'm lighting the grill as soon as I hit post quick reply! Wish me luck.

My buddy has a gigantic smoker (like the kind with a trailer hitch on the back it's so big). We smoked a 300lb pig overnight with cherry wood. Fantastic. |

I smoke ribs all the time. I would suggest a sweet wood like apple or cherry when doing ribs as it leaves a nice flavor. I use a dry rub, then smoke for 4 hours at 200-225 temp. The last hour I use a sauce and cover them about every 15 minutes and this works very well. Fall off the bone goodness every time. Good luck! |

Go to Harris Teeter and by their all ready cooked ribs on sale every Saturday for $7.99. Wrap in aluminum foil and heat on the grill or oven for about 30 to 40 min. Done. |
