Re: A quick poll about Cheesesteaks
Interesting. I like the chopped up meat technique better. You can get the slices of American cheese to melt together with the meat, and the meat juice tends to ooze into the cheeze while it's cooking. You get a real homogenous flavor, the meat has cheese flavor and the cheese has meat flavor.
When you go to Geno's the standard issue is the chunks of meat cooked wit onions or without, and then served in a cheesesteak, and then the wiz is thrown on top. There's no blending of flavors there. It's just meat topped with cheese wiz. I like it cooked together better. Plus the Geno's meat isn't exactly prime rib, I think that's what gets me. It's chunky and meaty, but not that easy to bite through. I think it was Dmek who said cheeze-wiz on a cheesesteak was terrible? I happen to agree. A lot of Philly people love the wiz, but I'd much rather throw a couple slices of American on that bad boy.
You can get the chopped up kind all over philly though and to me they all sort of taste the same. They are good...but I just the thin slice technique is more authentic. Trust me if you like American Cheese on your steaks you must try Steve's Prince of Steaks and get thier liquid american cheese on there...try and let me know if you still like Delasandros better. To each his own though...as long as you are eating a genuine Philly cheese steak and not ruining it with Mayo or ketchup then it's all good to me. |
Steak and cheese sandwiches can have mayo. Cheesesteaks can not.
You're right.
And Pat's is better then Geno's.
You're wrong. |
Re: A quick poll about Cheesesteaks
Ok SS brought this thread to my attention and I think with our growth over the last 12-18 months we could use some fresh input on this. So a bumping I will go.

Guys don't ever come to Japan. They put mayo on pizza.

Re: A quick poll about Cheesesteaks
Well, I just started buying the frozen sandwich steaks from costco so I can make them at home. I know its not sliced sirloin or anything, but its like 5 or 6 bucks for enough meat for 12 8" sandwiches.
I like mayo on mine, but I found the biggest difference between a good one and a great one, no matter what you like on it (and this also applies to burgers) is a toasted bun. I've toasted burger buns on the grill for years and everyone always raves about my burgers. Really they're nothing special, but the only thing I can think of that I do that most others dont is toast the bun. I do the same thing with my steak and cheese subs. I toast a nice italian sandwich roll on a cookie sheet in the broiler. On the same cookie sheet, I put the meat I've cooked (ever so slightly underdone) in a pile, top it with grilled onions, mushrooms, and bacon, them smother it with american and provolone cheese. I pop that in the oven with the bun so the cheese actually gets slightly toasted as well and melts throughout the sandwich. My wife likes lettuce and tomato with hers, but I just slap my meat/cheese pile on my toasted bun with a bit of mayo and go to town. |

i love mayo, but i don't see that one working out if you have a good pizza. Maybe one of those totino's one dollar frozen jobs, but not a good pizza. |
Re: A quick poll about Cheesesteaks
I like mayo on mine, but since mayonaisse is largely the hobgoglin of white folks, I think it would be more appropriate to ask the customer what they want on their sandwich.

Re: A quick poll about Cheesesteaks
Mayo is a necessity on a deli sandwich, but not on a cheesesteak if it's made right.
You only need mayo on a cheesesteak if the meat is all dried out, in which case the mayo masks the nasty dry meat. If it's made right, mayo just gets in the way. |
Re: A quick poll about Cheesesteaks
schneed, i had the best cheese steak down your way about 2 weeks ago. over in Conshohocken( sp?) at a little place called Mommas. both Pats and Geno's need to head over there for a lesson or 2

YEAH! I just had one there a couple of weeks ago, holy cow was that good. I like Delissandro's in Roxborough a lot, though I'm not up in that direction much anymore. |

Re: A quick poll about Cheesesteaks
For me mayo belongs in salads. The only exception is a turkey sandwich. Even then I go light on the mayo, I hate it when it's slopped on, it can totally ruin a good sandwich.
