Chicken Marinade
I"m gonna be tailgating all day Saturday at the WMZQ fest. Does anyone have a recipe for good chicken marinade, or have a recommendation for a good one to buy?

I think I'd like to have BBQ, put if you got something extra special that's not in the BBQ category that's worth a try, I'd be willing to go with that. |

Yes, yes I do.
Keys to this marinade are habaneros and allspice. You really can get as spicy as you want and put anything IN IT you want, but I marinate it in roasted, crushed habaneros, cracked peppercorns, garlic, lime juice, orange juice, all spice and a LITTLE nutmeg. |

I'm not all about exact measurements. For me, I know what I like. I like spicy, so I roast about 4-5 habaneros under the broiler or on the grill and I chop them and mash them up well. Lime juice and orange juice help to cut the heat some, and the other spices just add flavor. Don't ever add too much allspice because it can make it taste very pumpkin pie-like.

Then a few crushed garlic cloves, 2 teaspoons of allspice, 2 teaspoons of the peppercorns, a dash of nutmeg, and about 5-8 habaneros with the seeds removed, roasted, and crushed. Am I about on target? I'm sure it's not an exact science for you, you probably just toss it in by feel. |

Got it, go by feel. When you do the habaneros, do you take out the seeds or leave em in? |

Like I said in the hot sauce thread, I do love me some spicy, but the seeds are grossly hot. It's a pretty standard marinade. I haven't looked it up recently, but I bet it's similar to a lot of recipes. What makes it "yours" is whether you want citrusy or spicy. If you're not roasting the habaneros, I would leave half the seeds in. It's pretty spicy, but not unbearable. |

Best recipe for chix.
Buy up a bunch of chicken parts ( leg, thigh, breast). Throw in a huge pot with beer, brown suger, season all, tabasco, and some BBQ sauce. Let it sit for a day. Then boil it up. This cooks the chicken for the most part. Take them out shake on some season all and BBQ sauce. Then grill, just enough to get the marks and the flavor of the grill. IT comes out really good! EAt it cold the next day even better! |

That's funny you're from MD, because that's a very eastern Carolina type of marinade.
This is what I love the most about living in VA. Lots and lots of regional BBQ recipes. |

HAHA. Nice. I like a St. Louis sauce myself. Typically mine have a lot of different flavors from different regions in them. My default BBQ sauce at home is always ketchup-based (St. Louis) with molasses, brown sugar, garlic powder, onion powder, mustard powder, cider vinegar and minced garlic. Boil, puree and strain. Yum yum.

The no-drinking thing was because she is on a hardcore diet and when we drink, we tend to TOTALLY forget about diets and eat anything we want. So I was nice and stopped drinking in support of her. Drinking vow stays intact, sex vow does not.

This is good Marinade:
Make in a sause pan: 1 stick of butter 1/3 cup white vin. 1 TBSP dry mustard 1 TBSP whokashire sause (Spelling) 2 cloves garlic dash of ground pep & salt Heat until butter is melted and stir. This is great to bast the chicken while grilling. I keep the pan sitting on top of the grill to keep it soft as the butter will try and harden. If you take the above rec. and subsitute 1 cup of oil for the butter it makes a good marinate for both chicken and beef. let it marinade for a couple of hours before cooking. |

I LOVE starting sauces with butter. I don't do it as often as I'd like because of health reasons, but if you start with butter, sauté some onions and garlic, then puree, you get all the flavor without all the chunks.

No, that's not her. That's some random skank from CollegeHumor. And honestly, while that girl was hot, she was a little too skinny for me. My fiancee is talking about getting down to a four, and I think that's about as skinny as I want her. She'll lose her rack! :(

I usually try out different things on weekends, but during the week, I just grab store bought stuff to marinade. [url=http://www.lawrys.com/index.cfm?lry_value=products&prodtype=marinades]Lawry's[/url] makes some decent marinades (my fave is Havana Garlic & Lime, marinate shrimp and grill them as kabobs with veggies, serve with your favorite Mexican beer, lime wedge of course).
When doing jerk chicken, I get some Jerk Rub (I'm lazy, no recipe) and coat the chicken parts very thoroughly, then marinade in [url=http://www.worldharbors.com/product/jerk.php]this particular marinade[/url] overnight. Then they hit the charcoal grill (or oven during the week) and voila. My wife and I usually make red beans and rice and some sort of green veggie to go with. And yes, a woman should have curves. And while thin may be your thing, I don't mind a girl with a little something to grab onto. |

Ok, here ya go.
No matter if you have wangs or other chicken pieces, or no matter if you have a gas grill I can give you some solid advice on Chicken Choking and mean Cooking. If you can prep stuff in advance it will help out a lot. Get yer chicken pieces out of the pack and wash them off real well. and put in a bowl. In that bowl add A tablesppon of olive oil and equal amount of lemon or lime juice. Toss that around real well and get all of them coated. Now in a dry bowl mix: 1 tablespoon Parika 1/4 tbsp Black Pepper 1/4 tbsp Sugar 1/4 tbsp Salt Teaspoon Onion Powder tsp Garlic Powder tsp Dry Mustard Or whatever you have that is close to that. Toss that on the chicken and flop around until evenly coated. Put on grill to an internal temp of 180 or till juice runs CLEAR. Take off the grill and step away from other people...you will want to slap someone.
