Hey, I got bored today and slapped 24 racks of Baby Back Ribs on the smoker and am gonna slap on about 35 pieces of chicken in a bit too.

I'm hanging out waiting for my 3rd and final pit to be delivered today.

It's beautiful outside today and gonna be sunny in mid 80s.

After I cook these I will use the FoodSaver to seal them up for reheating tomorrow on the 4th of July.

Yeah get a website and some dry ice you could ship em. And your clients can start from right here, the Warpath.

Man those are some kind words guys and yes I will look into freezing and cold shipping of the Ribs and Pulled Pork. I just got the FoodSaver and it is bad as can be.

heh heh... Redskins Warpath Ribs

Oh, just slapped the chicken on. I tossed them in some oilive oil, lemon juice and a touch of seaseme oil and then my home made rub on them.

The cooker is rolling a stead 225-250 degrees.

Now add about 32 pieces of chicken.

So after 3 hours of ribs on I took them out of their racks and flattened out on a big try.

Lightly overed them and will cook another 1.5 to 2 hours. Then I'll use the food saver on most of them I gotta test a few with friends later.

The chicken I just flipped and moved away from hottest spot. They will go for about 3-4 hours total.

This spring I started Pit Pirate BBQ, LLC. with long time good friend Tim Bauckman who owns Tim's Rivershore Crabhouse on the Potomac River in Northern Virginia.

I've got to take and pass the Food Safety class and run over to the County Building and file my new business license but I am booking gigs already.

The plan has evolved from me just doing catering and then some roadside concessions to now we believe I need a small carryout location because of the love people have for my BBQ and all.

I hope to make enough with the business to afford me time and money to go and compete much more than I am right now.

STU, goes to Cornilus Griffin's house tomorrow to drop off his tricked out cars and I set a 2X Black Pit Pirate Polo and a couple of T-shirts and huggies for him to have. Stu will talk me up and I hope to get some parties from players once they taste my food and see my bling. lol
