So after 3 hours of ribs on I took them out of their racks and flattened out on a big try.
Lightly overed them and will cook another 1.5 to 2 hours. Then I'll use the food saver on most of them I gotta test a few with friends later.
The chicken I just flipped and moved away from hottest spot. They will go for about 3-4 hours total.
