Typically the way the contracts are written they have to pay it as written (over the span of years) unless the coach is hired somewhere else in a similar capacity. For example, Mangini isn't still being paid by the Jets because he's the Browns coach. Shanahan is still being paid by the Broncos because he's not employed anywhere. In the case of Gruden, I'm not sure if he's still being paid by the Bucs since he's working but not for an NFL team. I'd think he still is.
In either case, it doesn't make good financial sense for a team to lump sum pay a coach when he's let go.
