I'm in no way impressed with our coaching staff. I've stated as much since last season. They're handicapping the team IMO.

The issue is we can’t play man against their TEs because our LBs can’t cover.. so blitzing is hard to do

It's a game of chess. You don't have to blitz every down.
Pick and choose when you decide to blitz. Not to mention, be creative when we do so to cause just a brief moment of confusion or hesitation.
