It be be sensitive to cold or hot, more likely cold where chipped it if you chipped it just bad enough to be missing some enamel.

I chipped one of my molars a few years ago. It was very small, and I went to the dentist for advice. I basically asked the same questions as you: is it a problem? will it decay?, etc. He said they could fix it. I was naive, so I said, "okay". They charged me about $90 to fix it, and ever since then, that tooth has been sensitive. It wasn't sensitive beforehand -- only now that they drilled away about 1/2 of my tooth to repair it. So, now I have half of a fake tooth, that is more sensitive than before -- and I paid $90 for it! I would have been better off just leaving it, and only fixing it if a problem developed. I wish the dentist would have been more candid.
