Now for all you smokers out there. I'm going away from Kingsford Charcoal to Lump Charcoal and Wood this time.

The only problem with the lump wood charcoal is controlling the heat. I like the wood for hot fast cooking like steaks and burgers. I'd stay with charcoal and use some wood chips to add flavor. I soak the wood chips in water then just drop some in every time I check the meat. You can also wrap the soaked charcoals in aluminum foil and drop that on the coals. The wood charcoal I have used is cowboy charcoal and they even state that its hotter burning. Cowboy Charcoal Co.

My only gripe with the briquets is the ash that it produces.
I chose to go with wood mainly this time because of how it burns down, and I heard the same about lump charcoal. I heard that it burns hotter and longer so I'm guessing I won't need to use as much ? That's the charcoal that I bought actually !

They are not that bad to use but when they burn down they burn down to nothing. I've never really tried slow cooking with them so I guess we can see how they work. I would guess they would give a better taste then traditional charcoal. Its funny because you will get pieces of wood that you can tell was scraps from hard wood floors. I have a Weber charcoal grill and just this past Sunday purchased a new gas grill. Check out this grill I got.

That's pretty sweet ! I always liked how Gas Grills have the section for a skillet to fry peppers and all.

When the weber charcoal grill I have needs replacing I'd like to get one like the Oklahoma you posted. I grill about 50/50 gas/charcoal. I like the charcoal for my slower cooking stuff like chicken and the gas for beef. I also use the weber to cook beer butt chicken which I cook a couple of time a month. When it gets warmer I want to get your recipe for BBQ.

Yeah I want that big B too! I don't have a recipe for real but I'll definitely tell you what I do. I'm trying to do better at documenting what it is that I do. I'm about to start smoking this batch now. Just took them out the fridge and I'm lighting the grill as soon as I hit post quick reply! Wish me luck.

Late last fall the company I work for had a huge fundraiser for juvenile diabetes and Children's National Medical Center. My buddy has a gigantic smoker (like the kind with a trailer hitch on the back it's so big). We smoked a 300lb pig overnight with cherry wood. Fantastic.

GM I'm trying to get to that level where I can just drop a pig and wait. Must have been beautiful.
Well this is where I was about 9 last night. And here we are about 9 this morning By the way, I am NEVER using Briquettes when I smoke ever again. NO ASH ! The lump charcoal, firewood, and hickory wood blocks has treated me right. Great heat, lot of smoke and most of all, NO ASH !

This was 3:45 when I took them off the grill. About to wrap them in foil and put them in the oven on 200 to cook in its juices.

Go to Harris Teeter and by their all ready cooked ribs on sale every Saturday for $7.99. Wrap in aluminum foil and heat on the grill or oven for about 30 to 40 min. Done.
