Now, if I'm being logic, I think the one I was mentioning last year may very well be Brillat Savarin, I've been a fan for several years and the last couple of years I was buying one at a local cheese shop which was awesome. Remember, a good Brillat Savarin is creamy as fuck. You must have the crust, then a legit centimeter of creamy/almost liquid cheese underneath the crust, and then the heart of it is more compact. Can't find picture of a really good looking one online, but this one looks ok, I like em when you virtually can not eat it without having to lick your fingers afterwards: EDIT: yeah it was definitely Brillat Savarin, just looking at this picture of a so-so one, I'm aroused
