Re: Favorite Hot Sauce?
Take about three of those habaneros, put some olive oil on them, grill them until they get black. Let them sit in a sealed bag for about fifteen minutes, then peel off the charred skin. They should be soft and sweeter now. Chop them up, and throw them in a bowl. Grill some pineapple slices, chop those up and mix them with the habanero (basically use about 2 cups of pineapple). Use red onion, cilantro and garlic to mix. Marinate it with a tablespoon of lime juice and orange juice. It's my standard summer salsa. I made about half a gallon of it, and it works well with about anything. Nice and spicy, but the grilling of the habanero turns the heat down a few notches.

Re: Favorite Hot Sauce?
THANX TMC, I'll try it
Check this. take the Jalapeno's and cut off stem. Cut them in half, long ways. Clean out the seeds, etc inside (being careful to wash hands several times after). Fill each half with cream cheese, and wrap a 1/2 slice of bacon around each 1/2 of pepper. Secure with toothpick. grill until Slightly charred or just cooked good. Pure Knockout!

Re: Favorite Hot Sauce?
I found that online somewhere last year during football season and made those while it was still warm outside. Definitely delicious.

Re: Favorite Hot Sauce?
This is kind of random, but anyone that likes spicy dips has got to try this.
Sunday afternoon I was bored and made a bunch of different kinds of hummus (I go on spontaneous tangents every so often). I made black olive, sun dried tomatoes, avocado, and jalapeno hummus. No lie, the jalapeno hummus was soo freakin good. Just take 1 can of chick peas,3 fresh chopped jalapenos, 1/4 cup of lemon juice, 2 chopped garlic cloves, and 5 tbls of olive oil. Put it in your blender and eat it with pita bread, bagels, or chips. It is soooo money. And no, I wasn't high when I made it.

Re: Favorite Hot Sauce?
RobH - check out the hummus at Dogfish Head in G'burg next time you're there. It's pretty good.

Re: Favorite Hot Sauce?
Try this one out. Dave's Store:FIREdevil I tripple dog dare any of you. This stuff is great!
"In fact, it is the only sauce ever banned from the National Fiery Food Show." One or two drops of this stuff in any marinade and you'll be cooking with heat! I pride myself on being able to eat hot food. But I swallowed 1 tsp of this stuff for $100.00 and I would never do it again.About 30min later I thought there was an Alien eating through my stomach, it was horrible. But Dave's insanity sauce can be good when used in extreme moderation. Or if you just really want to fu-k with your friends at a BBQ.
