Honestly though I'm sure some of the dishes I cook are pretty bad too, especially when you start breading and frying things, using heavy cream, etc

All of that good food isn't exactly low cal

Deep frying is not that bad because the moister in the meet acts like a shield and helps prevent the oil from soaking into the food.

I don't know if that's true, but I do know that after you finish deep frying a turkey you end up with more oil in the fryer than when you started. I'm not a scientist so I don't know why this happens.

The problem is while the meat may not be soaking up a lot of oil, the breading is. If you bread it, then fry it, you're adding crazy amounts of fat.

And while frying without breading may seal out the oil, it still seals in the meat's natural fats. Baking, broiling, or grilling will allow some fat content to drip out of the meat.

It's all relative. Frying is the most unhealthy way to cook meat.

Try frying a Pork Chop in....water. NOT breaded. Just spiced and in.....water. You will be shocked at how good it is and with none of the demon oils and breading.
