Initially he did try to convert to WR with the Rams. Then he retired and resurfaced with the Pack trying to play safety. Then he retired again. Now he's back with the Chiefs.

it's gotta be tough for a kid coming out of college, who's played QB his whole life, to be told you aren't going to play QB...you're going to be a wide out, on a team where you'll be a practice squad member at best. When he first came out, he would have been no higher than 5th on the depth chart...I'm not saying what he did was right...he did what he felt he had to do in order to play QB.
I believe he's finally seen the writing on the wall, and he'll be a backup for the Chiefs. The kid is incredibly athletic, and if he's determined and focused, he could really excel. Guess we'll wait and see... Scott Frost was another Nebraska QB who was coverted to safety, and he did ok when he played. Crouch wasn't recruited to play QB because he was from Nebraska's Option Run offense. The NFL saw him for his speed rather than his arm (which is non-existant), so they tried to convert him into a WR. That didn't work, so he's now trying the other side of the coin.
