'Cooking with the Skins' recipe book

I bought this beauty on ebay months ago and I figured Id share a few recipes with you guys. Under Party Foods, from Charles and Tyrena Mann's Big Game Chili:
2 lb pinto beans
2 small green peppers, chopped
2 medium onions, chopped
2 cloves garlic, crushed
1/4 cup cooking oil
3 lbs lean ground beef
3 (1 lb) cans tomatoes
3 (8 oz) cans tomato sauce
3-4 Tbs chili powder
1/4 tsp tabasco sauce
1 cup water

Cook beans for 1 1/2 - 2 hours or until beans are tender. Cook beef, green peppers, onions, and garlic in oil until beef is lightly browned. Add all remaining ingredients EXCEPT BEANS. Cover and simmer 45 minutes. Drain beans and stir into beef mixture; cover and simmer 25 min.

Yields; 4 quarts
